Day One

So, today is kind of a weird day.  I have labs back to back from 9am to 4pm. (Yay me, right?)  I tend to sleep in as much as possible, so I really didn’t leave myself time for breakfast this morning, so on my way to class I stopped at the local co-op and grabbed an organic apple, an organic orange, and function water(function water is just a brand of bottled water.  I lost my reusable water bottle, so this was a last resort.  I definitly don’t advocate buying bottled water, however since it has tons of negative environmental impacts and you’re being charged 2000 times tap water for essentially the same thing.)  It came to a total of $3.21 so, all in all a really inexpensive breakfast/lunch.  Suprisingly, I found that the apple kept me satiated for a good two hours, the same with the orange.

I got home early, and prepared some whole wheat pasta, with an egg, minced onion and garlic and some thyme to tide me over while I’m at work.  Luckily, all of this was left over from earlier, and so there was no real cost to me.

After a semi-long night at work, I stopped off at the co-op on my way home to buy some supplies for dinner, since all I have right now are pasta, jam and penut butter.  I grabbed some snow peas, zuccini, and strained tomoatos.

(If you’re concerned about the tomatoes, the only ingredient is organic tomatoes and nothing more.)

Since I’m not much of a cook–yet!–I sauteed the peas and zuccini together.  Once they were done, I addes the strained tomatoes and added three cloves of garlic, some salt and thyme.  For the pasta I just used about two hand-fulls.

I was a bit worried that the peas might end up tasting weird simply because I’d never cooked them before and had no idea how to, but they seemed to have come out alright and let me tell you, I was starving and this definitely hits the spot!

To finish it up, I added everything together and grated some locally made parmesean cheese on top.

All in all, a delcious meal all for less than a happy meal!  In fact, everything I ate today was significantly less than you would find at a fast food restaurant.  Food for thought.
